That is a missed opportunity twice over. A branded tray costs very little more than a blank one, and it appears in every photo anyone takes of their food. But it also has to actually work, and the failure modes are specific and predictable.

Grease is what actually ruins a tray

Plain board wicks oil. Serve a chilli dog on it and within minutes the board has gone soft and translucent and your logo is sitting in a stain. A barrier coating stops that at the surface. If you serve anything wetter than a plain dog, specify the coating.

Rigidity is a one-handed test

Customers carry trays one-handed while holding a drink. A tray that flexes drops its contents, and the complaint lands on your food rather than your packaging. Press the centre of a sample with one hand: if it folds, the board is too thin, whatever it costs.

Compostable means compostable, not kraft-coloured

This catches out more venues than anything else on this list. A brown kraft tray with a conventional plastic barrier is not compostable and will fail an organics-stream audit. If you have a waste policy, ask specifically about the coating, not the board.
